Without going into detail about what you should or should not be eating, it seems to me that you need Variety in Single portion meals.
It is all too easy to eat too much when you are cooking for one person. You make up a bigger batch with the intention of batching it and freezing it so that you have quick meals for the future, but ofcourse it doesn't work out that way in practise because you end up having fewer, but larger meals just to use it up.
What you need to do is buy ready meals that are one portion meals. That way you will get used to the sorts of meals that feed one in a balanced way. You can always add an extra portion of Veg until your stomach gets used to the same sort of size of meals. I use Iceland or Farmfoods, which are the two freezer meals companies where we live, but I'm sure you will have similar where you are. 14 meals bought one time from these and you have 2 weeks variety of good meals as cheaply as you will get anywhere. Also, by buying ready made meals, it will teach you what vegies go best with which meats, poultry, fish etc. Weightwatchers frozen meals are also a good bet for a bit of variety without pilling on the weight.

Alan if your over 40 you can go get a free nhs health check at your gp's it's well worth doing. I do them all the time giving life style advice and what you should be doing for a healthy heart. They can also give you weight loss advice. Make sure you ask questions and not let them get away with just ticking the boxes.

Slow cookers are brilliant! Im newly single so with only making meals for myself I normally do all my cooking on one day and freeze some portions. You can literally just bung everything in and jobs a gudden! Ive started doing a veggie chilli which is really healthy so you can eat as much as you like, 3 courgettes 2 red peppers 1 onion 1 garlic clove tin of kidney beans tomato puree and tin of chopped tomatoes chop it all up chuck it in slow cooker and serve it with rice or cous cous! its cheap too. If your wanting to lose weight then watching your calories is probably the easiest to do you dont have to restrict foods that way just watch your portions

Ready meals are good for loosing weight as you can count the calories easily but not advised for someone trying to be healthy. Eat fresh, unrefined food where ever possible as it will make you feel full for longer and give you more sustained energy. Processed food is full of empty calories and salt. It's fine once in a while but don't base your diet on it!

I hate cooking for one. I end up resenting all that washing up! Do you have a freezer? I look for the bargains in the supermarkets and make a big batch of something to portion up and freeze. Whether it's a big hearty healthy stew or something slightly less healthy with a jar of pre-made sauce chucked in it I've always got a variety of 'home made' ready meals in the freezer. I also freeze blanched veggies. Couple of mins in the microwave and a pan of rice, pasta, noodles or whatever and Bob's your mother's brother.

Washing up yes I hate it,ignore it and it gangs up on you,I rarely microwave anything,maybe a forgotten cup of tea,have a freezer but its shared with my brother who uses 90% of it as its his flat and I moved in just over a year ago,so i cook in/on the oven everyday,I actually like to cook daily,but don't like to shop daily
