I thought I'd have a go. Has anyone tried making a rum and raisin juice? I have ASDA Rum concentrate (I think Perpetua recommended it) and have some PA Raisin concentrate coming. Any recipes or ideas on percentages welcomed.

Thanks for the offer rigdriver. You'd be more of a guinea pig than a tester Will do Debbie13, its always been my favourite ice cream. I've just had a thought, when I was a kid you could get a bar of rum and raisin chocolate, Old Jamaica, or something. Don't know if you can get it now, but it was lovely. If I get the R&R recipe right I think I'll have to try for that next. Haven't got any chocolate concentrate yet though.

Sorry to be cheeky, but while you're here, can I use etylomaltol in place of the sweetener in vanilla custard recipes? I'm not really sure what the differences are, but I've got one and not the other.

Not me with the Asda Rum I'm sorry Vigo . . . it was a concentrate that Griz always used to recommend though, as the best he'd found at the time. You can use EM, but it's not something I've ever found worked as a sweetener for me, made no difference at all to my mixes. TPA's or Flavor Wests are all I use now, they're both Sucralose based and work perfectly at 1% without being too much of a coil gunker. S'wot I find anyway.

Thanks Perpetua. That's what happens when you read too many threads, you forget who said what. Sorry for the mistaken identity. I think I'll give the EM a whirl and pick up some sweetener with my next batch of concentrates.

I forget who said what all the time vigowomble, so you're far from alone there. You can always add some sweetener at a later stage if you find the EM isn't sweet enough for your tastes.

Thanks Perpetua, I'll give it a whirl. I've never made a custard before, or any other mix with more that one concentrate. I've just made single flavour juices and then messed about with them, adding menthol juice to blackcurrant or lime etc. I did look up the online recipe finder where you can list your flavourings (on ejuicemeup? perhaps, perhaps not) and there wasn't any recipes that combined any of the concentrates that I first bought.

I was going to use that recipe but without the tweak. That does sound interesting, but where can I get vanillin crystals Perpetua? And do you treat them like menthol crystals?
