A thin layer of jam is what holds the different coloured sponges together and is used to stick the marzipan to the outside.
If it's not held together by Jam then it's not a true Battenberg.

It's difficult to tell what the jam flavour is but it's very fruity and yummy....and vaping this kind of thing doesn't make me hungry but it sometimes helps me not to nibble cake or biscuits!
