ok, just extracted the mint ... success so far. Smells fresh and minty over the rum. Tastes minty as well, like real mint. Testing in a mix tonight. So far can recommend this process based on smell and tongue tasting only.

I used a old 100ml PG plastic bottle. Put 4-5 mint springs in on their stalk so that they could plucked out of the bottle neck. Left for 48 hours. They all came out in one go. Gave them a squeeze onto a saucer to drain the excess then sucked that up in a syringe and put back into the bottle.
