If you have a Temperature Control (TC) device then you need to use Nickel, Titanium or Stainless steel coils. SS can take some time to get up to temperature so when you press the button especially when you pick it up cold. Nickel is OK but some people are sensitive to nickel it has a very low resistance so the coils can be quite big needing many turns, dependent on the tank you use this might be an issue. Kanthal is great for non TC applications and many prefer this with its flexibility in use. As to wicking material it mainly falls down to 2 basic types these days, cotton (organic or otherwise) and Rayon. Once again it's down to personal preference Rayon has a higher scorch temperature than cotton so may be more suitable to non TC (Kanthal) builds. Then you get different types of cotton one I hear talked about a lot is called "cotton bacon" which is supposed to have superior wicking abilities over standard cotton. You also still get silica wicks in lower power atomisers like the Protanks and CE4's. At the end of the day there are quite a few variables to take into account and the differences between them all can be quite subtle. Look up Youtube or read through the Forum for your specific device/tank setup. Or just ask here!

Nickel (Ni200), Titanium (grade 1), Stainless Steal (various grades, 316L is most common) and some other less common wires like NiFe30 can all be used for temp sensing. NiFe30 is probably the easiest to use, resistance is low but not too low, but you need a mod that has the ability to set the TCR. As Des said Ni has such a low resistance you have to use thin wire or single coils with most mods (I have a 0.03 Ω build here I vaping), if you mod can handle the low res it is very nice to work with, has excellent performance and stays quite clean, I have a nickel allergy and had zero problems using Ni for my ADV for over 18 months. SS until recently I have not been impressed with the temp regulation, but it also works well with unregulated, VV and VW. Titanium vapes well, there is a serious concern about the dioxides form if you let it get so hot it glows though safe to vape, I find it too springy which makes making well balanced duals hard. Ni is my favourite in this group.
I will leave not-temp sensing coils (Kanthal, Nichrome & Stainless Steel) to others.
Wicks, IMO the real benefit of change from cotton balls to pad, rayon and special vaping cottons is the fibres are all running in the same direction and they all wick very well. You may find different affects on your flavour between them, but unless you are on the limit of wicking cheap Puff brand pads (Amazon about £3 for 200) or rayon perform brilliantly.
