Thanks for sharing the recipe Jen On my mixing menu today is Jen's Sugar Nuts.

I was just wondering if anyone could share any tips on turning a raw fruit into a cooked fruit taste, I'm looking for that jammy taste you get in a lot of hot desserts.
One recipe I have in mind is baked pears with custard, would a lower percentage of pear with some caramel, brown sugar and cinnamon create that baked taste or is there something else I'm missing?
Any suggestions will be much appreciated.

monty, I've just had so many liquids on the go at the moment I haven't had chance to try any new ones. I've just washed and dry burned an IGO-L so I can have a quick taste for you.

It's not great unfortunately, I can't really taste chocolate nor does it smell chocolatey. It's hard to explain the taste, it's not sweet at all, a kind of bland biscuity taste is all I'm getting at the moment. It was mixed 3 weeks ago at 17% so there should be plenty of flavour.

I would say adding chocolate and sweetener would improve it but that kind of defeats the object.

It was 2.00am, the missus was in bed, a long night of insomnia ahead, I can find anything.
Hope the mint turns out OK though.
