Alan, to change your siganture, you click on profile, then click on edit profile, then click on "personal" & scroll down to the signature box. Then click on "save personal settings"

Ref the jpg and gif thing, a jpg file is always stationary while a gif can be made up of any number of separate pictures and then looped. It`s a bit like an old cine movie player in miniature. So you aren`t saving just one pic with gif, but two or more pics. In the case of the kitten and chicken, it is probably two pics looped over and over again indefinitely. I think my avatar pic has about 8 separate pics in it with a tiny movement on each one. It plays the "wink" and then starts over again indefinitely.
