My nephew made his 1st home brew juice yesterday chocolate & hazelnut, he tried it this morning & said it was lovely then tonight he says it tastes & smells rank. I gave him instuctions on how to mix & suppliers etc, all knowledge learned from AAEC of course. Any ideas whats happened anyone, i did suggest its because it needs steeping but said i would ask on here for him too.

Way too early for a chocolate flavour to taste consistently nice . . . needs 2-3 weeks steeping Di. Some of these flavours, VC is the same, one day can be ok and the next quite horrible until they've gone through a few weeks steeping. He'll need to have some patience now.

Plus 1 for the chocolate at least 2 weeks as Perpetua says ETA: I leave every mix to steep forat least 2 weeks now just to be on the safe side

Could just be me but when i put a mix together then quite often the initialtest is quite good and later on its all down hill for a while till it steeps. I guess we dont really look past the base flavour which further break down to their chemical component and they will all react differently(eg what really makes the strawberry ...well strawberry ) my theory is when its made initially theres no reaction with the other ingredient/chemicals then the reaction kicks off and take time to blend/settle(like i say just a theory

Thanks rich64 i will pass your info on not info only a theory Makes perfect sense to me Rich, it bound to take all those little flavour molecules time to infuse and get to know each other.
