vigowomble Some people believe that "key lime" simply refers to the limes that are used for making the pies, or limes that grow only in the Florida Keys. Actually, the key lime is a specific variety of lime. It is not exclusive to the Keys. It was brought there years ago and became naturalized. The key lime (Citrus aurantifolia Swingle) is in a class all of its own. Much smaller than regular "Persian" limes, the key lime ranges in size from a ping-pong ball to a golf ball (about 10cm to16cm in circumference). The peel is thin, smooth and greenish-yellow when ripe. The flesh is also greenish-yellow and full of highly poly embryonic seeds (two or more plants from one seed). The interior is divided by 10 to 12 segments, quite juicy and has a higher acidity than regular Persian limes. Key limes have a very distinctive aroma, which makes them valuable for culinary use.

Thanks lairey. I have some Inawera Lime concentrate that I only like when mixed with menthol, perhaps I should give Key Lime a go.

Can someone tell me the difference between Key Lime and just straight Lime? Thanks Great question, because I wondered as well, and thanks lairey for explaining it. Now my question, if you have 5ml menthol already made up, and 5ml key lime already made up, how many ml of each would you mix together?

Can someone tell me the difference between Key Lime and just straight Lime? Thanks Mine? Depends how short of juice I am as I tend to let stocks run low! Better after a week for sure. I've recently started keeping a small bottle of menthol conc with me, when stuff gets dull or I'm bored just chuck a few drops of it in my dripper with other stuff.

just made my self a 30ml batch this morn,do you steep your's or straight from the mix. Ian Not sure how I did that, but respoded to wrong post! I steep it a week as reckon tastes more even(if that even makes sense), but have used straight away as well. Hope you shook the conc? it settles out worse than any other conc I've used. Worth giving your mix a shake too before you refill to check it ain't settled.
