Its done in a similar way to chrome plating. Its submerged in a chemical and then an electrical current is run through it. I think different voltages produce different colours, but don't quote me on that

I know very little about the subject, but I did read somewhere that some alloys do not anodise well, for example Hammond boxes due to their high silicon content, and it's only a guess, that this goes for most cast alloys.

I dunno about the chemicals used for anodising, but I do know that the chemical in poundshop oven grill cleaning kits will remove it, just dump the item in a bowl of grill cleaner and leave for a couple of hours.
I did removed the red anodising from a small Wilko's torch using this method. I forgot to remove a small sticky label from the inside of the torch during the process and noticed when I did finally get it off that it had effectively masked a neat rectangular area, leaving a perfect red rectangle.
Hmm, now there is an idea for removing the colour from a Hana type mod but leaving a personalised logo behind.

That will do me nicely osdset my m65 is scratched to bits may try just giving it a zebra look for a trial run then advance on other things to something nice
