Evening each, Whilst still slightly puzzled (and delighted) by the undertones of Cremeux, I have a few other custard questions 1) Have seen Devon Cream in a few recipes - has anyone used it over 2%? Is it a well thought of flavour? 2) Has anyone tried Ella's comfort custard? (Saw this one floating on FB today - CAP V1, brown sugar, Devon Cream, Sugar cookie and vanilla shisha) 3) Are there any alternatives to Capella V1 vanilla custard as the base? (I'm not sure if it's the smell or taste at high % I find slightly disagreeable) I think one of the reasons I really like Kreeds is the low Cap V1 custard percentage, but I would like to make it creamier - would Devon cream be an option? Apologies for typing as I think aloud - hope some of this makes a little sense I still keep thinking of trying Gustard and Len's mustard custard from Chef's but can't find much on what makes them "different" from other offerings....

1 - I really like Devon Cream and when I first started mixing I made a bottle of it up at 15% and a bottle of TPA English Toffee at 10%, steeped them then blended them together and it was gert lush 2 - No haven't tried that one but have tried a few of Ellas recipes before and find them too weak for me overall 3 - TPA Custard is a reasonable alternative but nothing matches CAP V1 to my tastebuds Devon would definitely make anything creamier, it is really rich. I've tried the Big Lens Mustard Custard in a free sample, enjoyed it.

1) Another vote for Devon Cream . . . . it's a really useful flavour to have in and less potent, than CCW's straight Cream - which anything over 2% can taste like baby sick! Haven't used DC at anything over 4% as I'm normally combining it with other cream type flavours.
2) Haven't tried that one either, but any of Ella's recipes ( like others ) I mix at higher than suggested ratios.
3) DV's Creme Anglaise perhaps . . . . I also really like CCW's Egg Nog, which doesn't seem to get much of a mention. It's not especially spicy, but does compliment and enhance custardy flavours - for my tastes anyway.
4) Yes.
5) Haven't got round to making my Gustard up yet . . . . . so no help there!

I enjoy Ella’s comfort custard. Claire also has a recipe with Devon cream but it’s high cap v1 which I see you don’t really like. 3. FA premium custard, relatively new, has been getting ‘cap v1 beater’ type reviews but haven’t tried it. INW custard is also very good. I love kreeds custard but I almost always tweak it. 2 of my favourite tweaks are: 3% FA Caramel - makes a lovely caramel custard 2% CAP Cake batter - makes a lovely cakey custard Note to self... must try kreeds with CCW DC
