Regarding steeping, Do fellow mixers leave the cap & plastic dripper off all the time during the process, 
or leave cap & plastic dripper  off for only 24 hours?

Don't worry they'll still steep it'll just take longer, if you want to play catch up put them in a nice warm bath (don't mean the actual bath ) & if you can keep the water warm or just keep replacing it as often as you can.

Cap off in a dark cupboard for a week or 2 shake the bottle every 2 days or so, then in fridge.

Cap on ..... take cap off once a day and squeeze the air out and let new air in.....Helps the oxidation process.....Give it a little shake

Cap on, dropper in . . . the odd shake of the bottle when I think of it.

I just shake well, replace the caps and lids and hide them away in a dark drawer. With the system I've got now everything is getting at least five weeks before it sees the light of day again, by that time they are perfectly darkened and flavoured for me.
