whats the best apple for apple pie
ideally , hopefully that chefs or DV sell.
sweet apple would be good but i can always add sweetner , might even add custard when i get some.

If you are developing the flavour from "base flavourings" I would use a mix of a couple "organic and natural" Apple flavours with separate pie / pastry and sweetener elements. If you want to short cut it a bit.... "Capella Apple Pie" I can not possibly say.... where to look for them!

I found Capella's Green Apple to be a good natural tasting apple flavour. I basically followed Shiny's Apple Pie and Custard recipe, but used Capella throughout: Capella Green Apple; Apple Pie; Graham's Cracker and Vanilla Custard. If you were to follow this, I would suggest you reduce the amount of custard, as I guess the flavours are not as strong as Shiny uses, although they do give a natural taste. To me, Capella Apple Pie tastes a bit 'uncooked', but you can get 'round that by using the Graham's Cracker. I got all of the above from The Alchemist's Cupboard

Just buy Flavourart's Apple Pie . . . it's the best I've tried. Add a few drops of Clove for a lovely warm spice element . . . .
