water / vodka is used to thin the VG down a bit

Vodka will also give you slightly more throat hit to your mix FlipFlop . . . which de-ionised water won't, although you only use very small quantities so it's almost negligible the difference I find.
It can leave a slight smell/taste in a mix if you've a sensitive palate/nose . . . but I'd suspect a lot of mixers tend to use it, as it's a drink that many of us have ' in stock '.
