SO brought round my shopping last night. He couldn't get what I asked for so bought instead a 10.75lb Free Range Frozen Turkey All for me I don't remember if I've ever cooked a turkey cos I usually go for something a bit different, so I'm googling. And making room in the freezer for cold cuts Anybody got a foolproof guide? scylla

Goodness Scylla! I'll leave the advice to the cooks/chefs on the board, as any culinary guidance from me is likely to give you food poisoning!

Oh no, Jerry, turkey is much more popular than goose here (although some TV chefs are pushing goose). This may be because goose is much more expensive per pound, and I believe it's quite an unusual flavour compared to other poultry - but I've never had it: in 1950-ish my Irish relatives sent us over a goose for Christmas but it arrived high as a kite so had to be ditched (They used to send us over shamrock too, that survived better ) Kenny, thank you very much for that link, I've started reading it. According to that I should have bought a 1.5lb bird I've just remembered that I've got huge turkey roasting bags here, one of those might rescue me if I'm short of preparation time (like thru not being awake long enough, or not able to stand up long enough, lol). It looks to be a well-written and calming article so off I go to continue scylla

The net sites are telling me 190 degrees centigrade (oops, it's celsius nowadays isn't it? can't keep up!). I think that mass-reared poultry is too contaminated with this 'n that to be slow cooked any more ???

Scylla, we still use Fahrenheit here, so I got out my handy converter and 190 degrees Celsius sounds about right.

That's a good way to be, Chrissie. I eat some meat, but not too much. I have cut it way down over the years. My middle niece is a Vegan, she won't eat any animal products, not even cheese, milk or eggs, nor will she wear anything made of leather.

Wouldn't you know, I braved the outdoors to get my flu jab, blood test and BP done, and fell over on the way there - again (Uneven paving stones, not ice.) Man standing nearby ignored me, a young man passer-by took pity and picked me up *blush* Done me wrists in, specially the left one. Put arnica gel on and relieved it a bit but lord knows how turkey will get done. Can't trust me anywhere! Thinks: at least I didn't have to worry about being close to another human being and stinking of smoke scylla
