Fish = Cod (Big bit) nice crusty batter
Chips = Nice not to fat and not too slim and slightly crispy

All nice and greasy (not too greasy though)

Loads of vinegar and a dashing of salt (before the vinegar is put on)

In my early career in the North West, I went to a meeting in Yorkshire, and we went for lunch at Harry Ramsdens at his first restaurant at Guiseley, West Yorkshire. It was absolutely brilliant, couldn't believe the service or the quality and quantity of the food. Is it so difficult to get back to those days?

Its not healthy but its gotta be cooked in dripping not Veg Oil

I prefer plaice , lightly battered, but it has to be all cooked in dripping, none of this oil malarkey that is just wrong. Cod or haddock yes it would be haddock.
Oven chips - hands up who actually likes oven chips???
They are awful, there is only one type of chip, cooked in a proper chip pan ( using lard ) or a chippy chip using lard - big fat juices chips.

Classic, but to put it to the test you would have to visit each and every chip shop, so I stick by it, there is only one place to get decent fish n chips-
